CRAB SPRING ROLLS WITH SWEET RICE NOODLES

Ingredients:
Rolls
1 (6/12 pack) filo pastry,
4 small tins crab meat, (cooked)
1/2 chilli,
4 spring onions, (chopped)
1 red bell pepper,
grated carrot, (optional)
salt&pepper.
 Noodles
Sweet plum dipping sauce,
1 pack of rice noodles,
Mango, (chopped)
1/2 tsp cinnamon,
-
Oil, (vegetable)
1 eggs.

Method:
In a saucepan boil 150ml (approx) water. Add the chopped mango and cinnamon. Boil for 10 minutes. Turn the heat off.
Chop the chilli (without seeds!) and add 1/3 to the mango chutney mixture.
In a bowl mix the crab meat, chilli, red bell pepper, carrot and spring onions. Season genrously with salt and pepper. Lay out the filo pastry and cut down the middle length wise. Cut the halves again- or to size of rolls wanted. Fill a line about 1 inch in width across the width of the pastry. Beat the egg slightly and brush on the edges of the pastry. Tuck the sides in and roll the pastry up (making sure you don't have lodes of layers of pastry when rolled up.)
Put the noodles in boiling water to sit until the rolls are ready to serve, (no need to cook them alot)
Heat up about 2 inches of oil in a deep frying pan or saucepan. Cook for 3-5 minutes until a dark golden brown.
Drain noodles and serve with rolls on top.

 CHOCOLATE CHIP PEANUT BUTTER PANCAKES

Ingredients:
1 cup of plain flour,
1 1/2 tbsp baking powder,
1/4 tsp salt,
2 tbsp white sugar,
2 tbsp soft brown sugar,
1 large egg, (lightly beaten)
1 cup of milk,
2 tbsp butter, (melted)
2 heaped tbsp peanut butter,
3 tbsp chocolate chips.

Method:
In a jug, mix together the flour baking powder, salt and sugars and chocolate chips.
In a small bowl mix together the peanut butter, milk and egg. Add to dry mixture. When well mixed together, add melted butter. Heat up a frying pan with a little oil. Add a tablespoon of the mixture to the pan. Fry on each side for max 3 minutes or until air bubbles star to appear on the top.

BROCCOLI AND STILTON SOUP

Ingredients:
2 cups broccoli florets,
1/2 or so of crumbles stilton cheese,
1 potato chopped to inch peices,
4-5 cups vegetable/chicken stock,
4 spring onions,
100ml double cream,
Pepper.

Method:
Heat up the stock until boiling. When boiling add in the broccoli and potatoes, simmer for 5-7 minutes. Add the cream and onions. Boil for further 5 minutes. Turn off the heat and add the cheese. Let sit for a minute and stir. Serve :) x
